      Day 1Manila, Philippines
Welcome to Manila - The Pearl of The Orient

Let your epic Philippines gourmet journey begin with dinner in Manila at one of Asia’s best restaurants and have been elevating and revamping Filipino cuisine since 2016. The talented chef’s (trained by The Fat Duck, England) finesse in modernizing popular street food is definitely something worth looking forward to.

After dinner, get ready to be transported back to the Prohibition era of hidden drinking dens as we enter an unmarked passageway to a speakeasy bar (a new member of Asia’s 50 Best Bars) and enjoy exhilarating cocktails with an authentic 1920s speakeasy experience. This upscale bar features a collection of over 120 gin labels, including their in-house distilled gin.

      Day 2Manila
      Cook Up A Storm

Get ready to cook up a storm with Asia’s rising chef with an engaging cooking workshop. Always gearing to push the boundaries of dining experiences, this multi award-winning chef evolves his menu every quarter and with each one, he finds new ways to tease your imagination and creativity. End the morning with a scrumptious lunch.

Digest lunch and get working on your very own gin with an award-winning mixologist at the Gin Laboratory. Renowned for his classic cocktails as well as innovative creations using local ingredients found in the cities he visits, your day will not be dull with Mr D.

Up next – a mystery programme. What fun is life when you know every detail and leave nothing to the imagination and surprises?

Dinner will be absurdly delicious at Philippines’ poster boy chef’s trendy joint. Expect the unexpected – gear up for an omakase experience with fusions of Japanese’s zen and Filipino’s warmth. Fill your mouth with bold and punchy flavours made from the freshest ingredients sourced from Japan and locally.

      Day 3Manila
      Get Local

Rise early to visit the Salcedo Market, a community brought together by the love of food. This market offers a wide range of wet and dry food, with cuisine from all over the country. What better way to explore the market than with Pampanga’s very own culinary celebrity as a guide.

After a fulfilling lunch of classic local home-cooked dishes, indulge in Filipino’s most famous dessert at a wildly popular cafe amongst locals, which began as a humble dairy bar. Watch, learn and make this iconic Filipino dessert – a combination of over a dozen sweet beans, tropical fruits, jellies, caramel flan, topped off with finely shaved ice, evaporated milk, homemade Ube ice cream and topped with toasted rice krispies.

It’s cocktail hour! Let the Liquid Maestro mystify you in this exclusive pre-dinner cocktail workshop. As a veteran mixologist of 20 years and an advocate for sustainable agriculture, he is known for his knack ability to create hit beverages with kitchen cast-offs (aka food waste). Be prepared to be revolutionized by your knowledge of cocktails and how they are presented.

An exciting dinner awaits at an award-winning restaurant showcasing cutting edge modern techniques used on local ingredients to create sophisticated and contemporary Filipino and Southeast Asian dishes.

      Day 4Manila
      When in Philippines...

      Do as the Filipinos do!

Spend the morning with Asia’s Best Female Chef – Margarita Forés, exploring the Farmers Market, where leading international chefs and home cooks alike go to shop. Dubbed by her peers as the “Governor of Philippines” for her hard work in stamping Filipino cuisine on the world’s culinary map, Chef Margarita’s explosion of energy and enthusiasm, coupled with passion and deep culinary knowledge, will bound to keep you craving for more.

Where better but to complete the journey at the much-anticipated farm-to-table restaurant for lunch. A labour of love by the F&B doyenne, this restaurant offers an assortment of Filipino dishes like Adobo, Sinigang, Kinilaw and of course – the juicy and tender roasted Lechon. This is an absolute must-have dish! The organic lechon are specially reared in Negros and freshly roasted on Sunday morning at the chef’s own backyard!
