The talented chef’s (trained by The Fat Duck, England) finesse in modernizing popular street food is definitely something worth looking forward to.
After dinner, get ready to be transported back to the Prohibition era of hidden drinking dens as we enter an unmarked passageway to a speakeasy bar (a new member of Asia’s 50 Best Bars) and enjoy exhilarating cocktails with an authentic 1920s speakeasy experience. This upscale bar features a collection of over 120 gin labels, including their in-house distilled gin.

Dinner will be absurdly delicious at Philippines’ poster boy chef’s trendy joint. Expect the unexpected – gear up for an omakase experience with fusions of Japanese’s zen and Filipino’s warmth. Rise early to visit the Salcedo Market, a community brought together by the love of food. This market offers a wide range of wet and dry food, with cuisine from all over the country. What better way to explore the market than with Pampanga’s very own culinary celebrity as a guide.
After a fulfilling lunch of classic local home-cooked dishes, indulge in Filipino’s most famous dessert at a wildly popular cafe amongst locals, which began as a humble dairy bar. Watch, learn and make this iconic Filipino dessert – a combination of over a dozen sweet beans, tropical fruits, jellies, caramel flan, topped off with finely shaved ice, evaporated milk, homemade Ube ice cream and topped with toasted rice krispies.
It’s cocktail hour! Let the Liquid Maestro mystify you in this exclusive pre-dinner cocktail workshop. As a veteran mixologist of 20 years and an advocate for sustainable agriculture, he is known for his knack ability to create hit beverages with kitchen cast-offs (aka food waste). Be prepared to be revolutionized by your knowledge of cocktails and how they are presented.
An exciting dinner awaits at an award-winning restaurant showcasing cutting edge modern techniques used on local ingredients to create sophisticated and contemporary Filipino and Southeast Asian dishes.

Where better but to complete the journey at the much-anticipated farm-to-table restaurant for lunch.
